INGREDIENTS:
PUMPKIN STEAMER
2 cups almond milk
¾ cup coconut milk cup pumpkin puree
½ teaspoon vanilla extract
3 tablespoons coconut sugar stick cinnamon
¼ inch ginger, cut into slices
1 cardamom pod, crushed
A pinch nutmeg
WHIPPED CREAM
1 cup heavy cream
¼ cup condensed milk
3 tablespoons pumpkin puree
2 teaspoons pumpkin spice, plus more for garnish
METHOD:
- In a saucepan over medium heat, add the almond milk, coconut milk, pumpkin purce, vanilla extract, and sugar. Bring the mixture to a gentle simmer for 3 minutes.
- Remove from the heat and add cinnamon, ginger, cardamom, and nutmeg. Cover to allow the flavors to infuse for 5 minutes, then strain.
- To make the whipped cream, whisk together the cream and condensed milk until the mixture thickens. Whisk in the pumpkin and the spice, mixing until thick and smooth.
- Divide the mixture between 4 serving glasses.
- Top each glass with whipped cream and pumpkin spice.
