INGREDIENTS:

PUMPKIN STEAMER

2 cups almond milk

¾ cup coconut milk cup pumpkin puree

½ teaspoon vanilla extract

3 tablespoons coconut sugar stick cinnamon

¼ inch ginger, cut into slices

1 cardamom pod, crushed

A pinch nutmeg

WHIPPED CREAM

1 cup heavy cream

¼ cup condensed milk

3 tablespoons pumpkin puree

2 teaspoons pumpkin spice, plus more for garnish

METHOD:

  1.   In a saucepan over medium heat, add the almond milk, coconut milk, pumpkin purce, vanilla extract, and sugar. Bring the mixture to a gentle simmer for 3 minutes.
  2.   Remove from the heat and add cinnamon, ginger, cardamom, and nutmeg. Cover to allow the flavors to infuse for 5 minutes, then strain.
  3.   To make the whipped cream, whisk together the cream and condensed milk until the mixture thickens. Whisk in the pumpkin and the spice, mixing until thick and smooth.
  4.   Divide the mixture between 4 serving glasses.
  5.   Top each glass with whipped cream and pumpkin spice.
